Charcuterie Sibilia
Charcuterie Sibilia is a delicatessen and butcher in Lyon, France, run by Colette Sibilia (known locally as Coco) that is best known for its sausage.[1] The business started in 1925.[2] The book Ripailles: Traditional French Cuisine includes a profile of Sibilia describing her as "queen of the cervelas, champion of the gratou, expert in the sabodet".[3] Sibilia also sells saveloy, quenelles, pork and chitterling sausage.[1]
Sibilia's knowledge of gastronomy has established her as a "Mère Lyonnaise" (Mother of Lyon).[1]
