Cucumisin
Cucumisin (EC 3.4.21.25, euphorbain, solanain, hurain, tabernamontanain) is an enzyme.[1][2][3][4][5][6][7] This enzyme catalyses the following chemical reaction
- Hydrolysis of proteins with broad specificity
This enzyme is isolated from the sarcocarp of the musk melon (Cucumis melo).
