Streptomyces rubiginosus is a bacterium species from the genus of Streptomyces which has been isolated from soil.[1][4][3][5] Streptomyces rubiginosus produces glucose isomerase.[6][7][8] glucose isomerase from Streptomyces rubiginosus can be used to texture fish and meat products.[9]
