Cutthroat Kitchen is a reality cooking television show hosted by Alton Brown. It premiered on August 11, 2013 on Food Network, and features four chefs competing in a three-round elimination cooking competition. The contestants face auctions in which they can purchase opportunities to sabotage one another. Each chef is given $25,000 at the start of the show; the person left standing keeps whatever money he/she has not spent in the auctions. The show is in its twelfth season as of March 2016.[1] The series shares some basic elements with other four-chef three-round elimination-style competitions on Food Network including Chopped and Guy's Grocery Games. Numerous contestants of Cutthroat Kitchen have competed on these shows as well.
Format
Each episode features four chefs competing in a three-round elimination contest. Brown gives each chef $25,000 cash before the first round; for insurance reasons, prop money is used instead of actual currency.[2] The chefs each have their own stations to prepare and cook food, and the kitchen includes a wide range of other tools and equipment as well as a pantry stocked with ingredients.
In each round, the chefs are assigned a dish to create. Although most dishes are specific, such as macaroni and cheese, French toast, or fish and chips, Brown occasionally issues a broader challenge such as British pub food or a skillet breakfast. Other than in the first season, and a handful of second and third season episodes, the first two rounds typically feature savory dishes and the third features a dessert. After the dish is announced, the chefs have 60 seconds to collect all of the ingredients they anticipate needing from the pantry, using hand-carried shopping baskets. When the time runs out, Brown shuts the pantry doors; any chefs who remain inside must surrender an ingredient of his choosing.
In each of the first two rounds, Brown follows the shopping time by auctioning off a series of items that the chefs can use to sabotage one another. The highest bidder pays for the item out of his/her remaining funds, and if necessary, decides which opponent(s) will face the sabotage. The auctions are followed by a timed period (usually 30 minutes) in which the chefs must prepare and plate their dishes. Brown occasionally offers additional auctions during the cooking time. In the final round, the two remaining chefs begin cooking immediately after shopping for their ingredients, and the auctions take place while they are working. As each round progresses, Brown offers comments (delivered as a piece to camera) on the chefs' cooking methods and strategies to compensate for the sabotages.
Once the cooking time has expired, all visible indication of the sabotages is removed from the set and a judge is brought into the kitchen to evaluate the dishes. In order for the judge to be able to offer an unbiased opinion, he/she is sequestered in an isolation room during each round and is not told about any of the sabotages that were in effect. Each dish is judged solely on three criteria: taste, presentation, and resemblance to the assigned dish. The chefs are given a chance to describe and explain their dish and choices. They may not complain in general or disclose any sabotages they faced, but they may try to explain (truthfully or otherwise) the cooking choices they made or were forced to make.
The chef whose dish is judged the least satisfactory is eliminated from the game and forfeits all of his/her remaining money. After the third round, the surviving chef keeps whatever money he/she has not spent on auction items.
Auctions
Brown typically starts each auction by asking for an opening bid of either $500 or $1,000. However, where only one contestant has more than $500, the bidding may begin lower. All bids are in multiples of $100.
Auction items at the start of the first two rounds are introduced by being lowered in a dumbwaiter. Items are generally represented by a token object, even when the sabotage is not tangible, and often feature equipment that has been custom-built by the show's creative team. Some auction items have been reused in several episodes. Items are often thematically related to the assigned dish, or are a pun on or inspired by the name of the dish (for example, a string of velvet ropes to hinder a chef's movements while making red velvet cake). Brown often weaves a story around the item being auctioned, suggesting a personal connection. At Brown's discretion, an auction winner may be allowed to apply a sabotage to him/herself, such as accepting a poor-quality ingredient after she/he has neglected to obtain its better-quality counterpart from the pantry.
Common types of auction items include:
- Swap: Forcing one chef to give up one or more ingredients or pieces of equipment (including heat sources) and accept a less desirable replacement.
- One specific type of swap forces a chef to give up one or more ingredients and obtain them from a different source, such as a coin-operated vending machine or by digging through a vegetable garden.
- Swap and assign: Forcing two or more opponents to each give up one ingredient or piece of equipment, then assigning a different replacement to each.
- Confiscation: Taking an ingredient or equipment type from one or more opponents, without a replacement being offered. In the case of ingredients, the winner may sometimes be allowed to add the confiscated item(s) to his/her own basket.
- Forcing one or more opponents to incorporate an unorthodox ingredient into the dish.
- Requiring one or more opponents to prepare their dishes in a particular manner, or banning them from using certain cooking methods.
- A replacement prep station that is more difficult to use than the standard ones in the kitchen. The design of these stations typically makes them more awkward and/or less stable than the standard ones. In some cases, the chef must first build the station from provided materials and/or use only a built-in heat source such as a hot plate or toaster oven.
- Being forced to hold, do, or wear something throughout the cooking period.
- Restriction to a chef's freedom of movement, or requiring two or more chefs to be physically attached in some way.
- Some "restriction of movement" sabotages require two chefs to work together to complete — and provide the opportunity to sabotage — each other's dishes. For example, one chef may be forced to do the prep work for both dishes while the other does the cooking, with a fence separating the two.
- Time suck: Loss of cooking time either by simply sitting out for a certain set period of time, or by having to stop cooking and complete a task before being allowed to continue. In the latter case, the amount of time lost depends on how quickly the chef can complete the task.
- In some cases, two or more chefs must take part in a contest, with the loser sitting out as above.
- A time suck can be combined with a swap. A chef loses one or more ingredients, but can win back either those items or replacements for them through a time-consuming activity such as a carnival game. At any time, the chef may stop trying to recover ingredients and resume cooking. Swaps or confiscations that occur during the cooking time can also result in a time suck, as the chef might be forced to discard any work prepared with the now-forbidden tool or ingredient and start over.
- Station swap: This auction is typically offered during the cooking time; the winner can force two of his/her opponents to trade prep stations. Each affected chef must use the other chef's ingredients and work-in-progress as his/her own and comply with any sabotages in effect against the other.
- Benefit: The winner gains the exclusive right to perform some action during the round, such as being able to add salt, fry food, or taste his/her own cooking. Although offered as an exclusive benefit, it effectively is a sabotage to all of the other chefs.
Failure to comply with the sabotage conditions can lead to mockery from Brown, a fine (anywhere from $100 to $2,000 per offense), and/or being forced to restart the recipe.[3][4]
Judges
The show's regular judges are Jet Tila, Simon Majumdar and Antonia Lofaso. With the exception of "Judging Judges" (see below), each episode features only one judge who evaluates the dishes in every round. The contestants do not learn the judge's identity until he/she enters the kitchen at the end of the first round.

"A Crepe-y Situation" featured the first viewer-submitted sabotage. The auction for this sabotage was held before the chefs entered the pantry; the winner could force one opponent to collect ingredients without using a basket to hold them. Later variations of this sabotage have required the affected chef to use an alternative container to hold ingredients, such as a milk bottle or a giant skewer, or to collect them while riding a slow-moving mobility scooter.
"Gluttons for Punishment" featured former contestants who lost in earlier episodes looking to redeem themselves. The returning chefs were Patrick Stark (Season 1: Vive le Sabotage), Crystal "Pink" Delongpré, née Harris (Season 1: Pork Chops and Sabotage), Farid Zadi ( Season 1: Let Them Eat Cupcakes) and Jack Lee (Season 1: Chicken Cordon 'Blue').
"Breakfast in Bed" featured four former champions. The contestants were Frankie Terzoli (Season 1: Vive le Sabotage), Jamie Gwen (Season 1: Pork Chops and Sabotage), Tonya Charles (Season 1: Let Them Eat Cupcakes), and Brian Cartenuto (Season 1: Winner, Winner, Fried Chicken Dinner).
In the 2014 and 2015 Halloween specials, one of the first-round auctions offered a "Deal with the Devil." The winner gained immunity from elimination for the round; if that chef's dish was the worst, Brown would overrule the judge and require him/her to eliminate the second-worst. In 2014, the winner was prohibited from bidding on auctions for all subsequent rounds, while in 2015, the winner had to forfeit half of his/her remaining money at the start of the second round. In both cases, the auction winner had the worst dish in the first-round and was eliminated in the second round.
"Judging Judges" featured the three main judges and Geoffrey Zakarian competing, with the winnings going to charity. The winner's charity received $25,000 while the three other charities received $5,000. Each round featured a different guest judge, each from a top restaurant related to the dish: Jaime Martin del Campo and Ramiro Arvizu for round one, Daniel Holzman for round two, and Sherry Yard for round three. The appearance of del Campo and Arvizu is the only instance to date in which multiple judges have served in a single round.
In "Crabs of Steel," Tila announced a tie between the two chefs (chef Alexis Hernandez and chef Eric Nelson Brown) in the final round. They both got to keep the money they had left.
The episode "In it to Twin it" featured two sets of twin brothers as the four chefs.
In "The Cone Ranger," chef Kyle Schutte won the game without winning any auctions, allowing him to keep the full $25,000.
The episode "Tiki Torch-ure" contained an auction item sponsored by Farmers Insurance. The winner of this auction could reject any one sabotage assigned to him/her by an opponent, who would then have to give it to someone else.
During the first round of the Christmas Special "Sabotage Is Comin' to Town," Brown auctioned off three sabotages as a package deal, one to be given to each of three chefs. Rather than assign them directly, the winning bidder decided the order in which the other three would choose the sabotages for themselves.
In the Valentine's Day Special "Alton and the Chocolate Factory", all four contestants were pastry chefs and all the dishes assigned were chocolate dishes. The runner up of this episode : Chef Jackie Mazza is the only chef to spend all of his/her money on sabotages
In "Grill or Be Grilled," all the contestants had experience in grilling and were required to use charcoal grills as their only heat source throughout the competition.
The episode "The Best of the Worst" featured sabotages from past episodes that had been judged by the production staff to pose the greatest difficulty for the chefs.
In "Circus Spectacular" the dishes and sabotages were all circus themed.
Four episodes have featured chefs with a particular specialty: "Stop, Drop and Flambé" (Season 9, firefighters), "The Truck Stops Here" (Season 9, food truck chefs), "Grandma-tage" (Season 9, grandmothers), and "The Hunt for Bread October" (Season 10, military service members). In addition, "Grandma-tage" featured a silent auction in the second round, with the chefs secretly writing down the amount they were willing to pay for a particular sabotage.
From April 19 to May 17, 2015, Cutthroat Kitchen aired a five-part "Evilicious" Tournament featuring 16 of the show's most memorable contestants.[6] Similar to Superstar Sabotage, this tournament consisted of four preliminary heats, with the winners keeping their unspent money and advancing to the final round for a chance to win up to $50,000 more. The returning chefs were Kori Rayburn (Season 1: Steak Out), Leelee Wiginton (Season 2: Wham, Clam, Thank You, Ma'am), Robert Burmeister (Season 2: Fowl Play), Tommy Stevens (Season 3: Hawai'i 5-Oh No!), Matthew Grunwald (Season 3: Tso Good), Sammy Monsour (Season 3: The Rice Stuff), Jason Febres (Season 3: Ladel-ayheehoo), Frances Tariga-Weshnak (Season 3: Hakuna Frittata), Morgan Bonazzola (Season 4: I Can't Believe It's Not Udder), Jernard Wells (Season 4: Anything but a Cake Walk), Tom Lin (Season 4: Welcome to the Jungle), Aaron Crumbaugh (Season 4: Chili'd to the Bone), Alexis Hernandez (Season 5: Crabs of Steel), Yaku Moton-Spruill (Season 6: The Supper Bowl), Carlos Anthony (Season 7: Gnocchi to Victory), and Tregaye Fraser (Season 7: Whisk-ey Business). also in the first round of the Evilicious Tournament finale the four chefs were split into two teams of two with one chef of each team does one component of the dish while the other two chefs does the other component.
From August 12 to September 9, 2015, Cutthroat Kitchen aired a five-episode Camp Cutthroat tournament, which Variety described as Brown "invit[ing] the most elite Cutthroat Kitchen alumni to a secret location deep in the wilderness for an extreme culinary throw down."[7] These episodes were filmed in Santa Clarita, California, at the same movie ranch site as the 2014 FOX reality series Utopia.[8] Four preliminary heats were played as in previous tournaments, with each featuring only three chefs and two rounds of cooking, but more sabotages. The winners of these heats kept their unspent money and advanced to the finals for a chance to win up to $50,000 more in a standard three-round contest.[9] Auction items were handed out to Brown by a person hidden inside a small tent, rather than being lowered on a dumbwaiter, and portable coolers instead of refrigerators were used to keep perishable items cold in the pantry. The returning chefs were Jessica Entzel (Season 2: Melts in Your Pot, Not in Your Hand), Emmanuel Delcour (Season 2: Pressed or Steamed), Candice Wilson (Season 4: I Can't Believe It's Not Udder), Ruddy Bello (Season 4: I Like My Peppers Pulverized), Hop Phan (Season 6: S'Mortal Combat), Jack Taylor, Emily Ellyn (Season 7: Whatchoo Taco'ing About, Alton?), Monterey Salka, Trevor Ball, Clay Carnes (Season 7: The Great Egg-Scape), DeMarco Ellis (Season 8: Tikka Me Alton), and Robyn Almodovar (Season 9: The Truck Stops Here). Note: Robyn's Camp Cutthroat Heat Aired Before Her Original Episode
Top Chef alumni Tiffany Derry also completed and won Cutthroat Kitchen on the season one finale episode : S'more Sabotage
On November 4, 2015, an hour-long special called "Secrets of Survival" aired prior to Heat #1 of the second "Superstar Sabotage" tournament. It featured Alton Brown informing viewers of tips and secrets on how to survive wicked sabotages, impress the judges, outmaneuver the other chefs competing, and be declared the winner. The special also included footage of many various episodes from the first 9 seasons.
2015 featured two special holiday episodes that brought back previous contestants. The episode "Naughty vs. Nice" featured two "Nice" chefs and two "Naughty" Chefs. The contestants were Jackie Mazza (Season 6: Alton and the Chocolate Factory), Kathy Poland, Elliot Farmer (Season 8: The Best of the Worst), and Jean-Paul Bourgeois (Season 9: We Came, We See-Sawed, We Conquered). The winner of that episode collected $800, the lowest winning total of any episode up to that point. In the second episode "Holi-Dazed and Confused" the returning chefs were Jake Vorono (Season 6: Thanks, but No Thanksgiving), Loreal Gavin (Season 8: Circus Spectacular), Jess Roy (Season 8: Molasses, Mo' Problems) and Jemil Johnson (Season 9: Greece Lightning).
In "50 Shades of Sorbet", Kaimana Chee became the first chef to make it through all three rounds without receiving a single sabotage.
One first-round sabotage in "When Cherry Met Salad" allowed its winner to confiscate one opponent's basket and replace it with the mystery ingredient basket from Chopped. The basket contained a whole pineapple, corn dogs, wasabi powder, and canned cannellini beans. The affected chef had to use all four of these ingredients, but was also given a shelf of additional items to choose from, similar to the pantry and refrigerator available for competitors' use on Chopped. In keeping with the theme and pun, Chopped host Ted Allen was the judge.
One auction in "Cashew If You Can" allowed its winner a chance to win more money. The chef entered a money booth and had 20 seconds to grab as much cash as possible, which would be added to his/her available funds. The winner paid $3,000 for this item and collected that same amount while in the booth, resulting in no net gain or loss.
In the final round of "The One With William Shatner," one chef had to shoot balls into the pockets of a pool table in order to move between stations (equipment, prep, or cook). Three pockets inflicted penalties if a ball was sunk in any of them, including a $2,000 fine paid to the opponent.
During the first round of "My So-Called Trifle," one chef injured herself and had to drop out of the competition, the first such occurrence in the show's history. As a result, no chef was eliminated in that round, but judge Antonia Lofaso was asked to choose the best dish of the remaining three. That chef received an advantage at the beginning of the second round, by having his funds restored to the original $25,000. He went on to win $300 in that episode, the lowest total collected by any winner to date.
In the first round of "To Kale a Mockingbird," Brown offered a deal in which one chef could give up his/her entire $25,000, thus being unable to bid on any auctions, and collect $50,000 if he/she won the game. Two chefs were ready to accept the offer, so Brown held a reverse auction in which they bid back and forth as to how little money they would accept as a prize. The winning bidder played the game for a chance at $40,000, but did not win.
In June 2016, a special "Time Warp" Tournament will air. Each of the four heats and the finale will feature dishes and sabotages from different decades, from the 1950s until the 1990s. The returning contestants are Chris Mortensen (Season 1: Un-Holy Trinity), Chris Gentile (Season 2: Duck, Duck, Gnnochi), Perry Pollaci (Season 3: Life's a Mystery... Meat), Won Kim (Season 6: Who Tarted?), Dwayne Ingraham (Season 6: Alton and the Chocolate Factory), Clay Carnes (Season 7: Great Eggs-Scape, Season 9: Camp Cutthroat: Rock Wall Me, Amadeus), Craig Jones (Season 8: Carne Diem), DeMarco Ellis (Season 8: Tikka Me Alton, Season 9: Camp Cutthroat: If It Bleeds, We Can Skillet, Season 9: Camp Cutthroat Finale: The Great Troutdoors), Guy Clark (Season 8: All in a Day's Jerk), Jess Roy (Season 8: Molasses, Mo' Problems, Season 11: Holi-Dazed and Confused), Nancy Manlove (Season 9: Grandma-tage), Adia Benson (Season 9: Sabootage 2: Electric Boo-Galoo), Guilherme Barreto (Season 10: Actions Speak Chowder than Words), Elizabeth Solheim (Season 10: Fajita the Moment), Joe Rego (Season 11: Cacciatore by His Toe), and Martha Esquivel (Season 11: Hit Me With Your Best Pho). Note: This will be the third separate appearance on Cutthroat Kitchen for Carnes, Ellis, and Roy. Both Ellis and Carnes competed in their original episodes and on Camp Cutthroat. Roy featured in a 2015 Hoilday Special as well as her original episode. DeMarco Ellis is the second chef to have competed in at least four episodes of Cutthroat Kitchen, a record shared with Fabio Viviani. Note: All 16 returning chefs were the winners of their original episode, a first for a Cutthroat Tournament.

Two companion series are available on the Food Network website. In Alton's After-Show, Brown meets with the judge from a particular episode and reveals the sabotages that were in effect during each round of the competition. The two discuss methods by which the chefs could have adjusted their recipes to compensate for these disadvantages. Testing the Sabotages features food stylists' efforts to create assigned dishes while complying with restrictions on ingredients and equipment.
