Taglierini [taʎʎeˈriːni] is a type of ribbon pasta. It is like tagliatelle but is a thinner version. It is a traditional recipe in Piedmont where it is called Tajarin[1] and made of egg dough (pasta all'uovo).[2] It is typically served with butter and truffles (tajarin ai tartufi)[3] or meat roast sauce (tajarin al sugo di arrosto).[4]
